I’ve been working on setting up an AHM16 for a moderate PA deployment. The venue already has a BLU-100 that is currently being used. We’ve got an AHM that runs a few “background”
music zones around the building. I’m setting up some inputs and outputs on the AHM to serve as backups in the event the BLU-100 fails. Is the only way to apply crossover filters such as L-R and Butterworths, to outputs by converting some of the “zones” to speaker processing? Would be nice to be able to apply them regardless of that setting.

Yes, that’s currently the only way to implement those kinds of filters. Would you like to apply them in the PEQ block? Or is it the sacrifice of some Zones that’s most troublesome?

You could fake a crossover with HP and LP filter on the channels but that would not give you a completely smooth phase linear transition.
