There must be a correct sequence to do this because I have the same problem on a DM64 and a DM48 of not being able to change the IP address of the unit (both connect to their own S5000 but not connected to each other). No matter what I do, upon reboot it will fail to connect and force me to choose a MixRack that has the default IP address. I can change the IP address of an S5000 but not its MixRack. What am I missing?
I changed my mixrack and surface from their defaults quite awhile back. IIRC I think that I did the mixrack using director, and then changed the surface to be part of the new subnet.
shut down. disconnected all add in cards
reboot/reset networking on MixRack

reboot OK – Changed IP address on MixRack via tab MixRack/Config/Network 192.168.1.80
