I’ve done fibre – and depending on the switch (because at that point they tend to be managed) you need to be careful to disable protocol based options.

Simple GigE switches in a row should be OK – you’ll need 3 (four lengths of cable).
Those switches have to be full duplex, and preferably simple (else go around disabling protocol based features)

The 3 switches option will be cheaper, the fibre may well be more convenient, since you don’t need power at intermediate points on the run.
